Although I love to indulge while on vacation, I also like to incorporate healthy meals and plenty of vegetables into my diet so I feel my best. We made a lot of meals at our Airbnb while we were in Hawaii, and I picked up this Chef Hak’s Garlic Roasted Veggies & Quinoa to try as a side dish. I love that it has a decent amount of protein, is loaded with vegetables, and is both gluten-free and dairy-free. This side dish is located in the refrigerated section of Costco, near the Chef Hak’s Spaghetti Squash Marinara and the Sukhi’s Chicken Tikka Masala. The item number is 2009544.
Taste
The first thing I noticed was that the vegetables and quinoa are well seasoned. There isn’t a lot of quinoa, and I’d say there’s more cabbage than any other ingredient. The vegetables have a nice, crunchy texture, with the exception of the zucchini, which is a bit soggy.

I find zucchini tends to become soggy when it’s heated, regardless of how it’s prepared. I like the mix of vegetables, they complement each other well. Overall, the dish is flavorful and makes eating a side of vegetables much more enjoyable!

Cost
The box comes with two 15-ounce pouches and costs $12.79 USD, which works out to about $6.40 USD per pouch. That’s not cheap, but you’re definitely paying for the convenience.

Convenience
The Veggies & Quinoa needs to be kept refrigerated, and the best-by date is only about a week and a half from when I bought it. If you aren’t going to use it before the expiration date, you can easily freeze it. The package includes heating instructions for three methods: an air fryer, a skillet, or a microwave.

I decided to heat mine in a skillet, and it turned out really well in just a few minutes. I recommend serving it with barbecue chicken or kebabs, salmon, or even pork chops.

A one-cup serving contains 140 calories, eight grams of fat, 410 milligrams of sodium, 11 grams of carbohydrates, five grams of fiber, two grams of sugar, and seven grams of protein. I like that each serving provides seven grams of plant-based protein, and the sodium level is reasonable.

The ingredients list is short and simple, with broccoli, cabbage, edamame, kale, zucchini, quinoa, and hemp hearts as the main ingredients. I really appreciate that it’s made with olive oil instead of canola or vegetable oil. Chef Hak’s Garlic Roasted Veggies & Quinoa is gluten-free and dairy-free, but it does contain soy.
