While we ate out for most of our vacation in Maui, we also wanted to enjoy a few healthy meals at our condo. During one of our Costco trips, I spotted Kevin’s Cilantro Lime Chicken, a refrigerated meal that isn’t available at Costco Canada. Since it’s high in protein, gluten-free, and paleo-friendly, it seemed like the perfect healthy vacation dinner. I found this meal in the refrigerated deli section of Costco near the Chef Hak’s Garlic Roasted Veggies & Quinoa and the Kirkland Signature Fully Cooked Chicken Sausages. The item number is 1531775.
Taste
I liked this meal a lot. It wasn’t mind-blowing, but I find that most paleo or healthy meals aren’t necessarily the best thing I’ve ever tasted. The chicken seems to be really good quality, it’s tender, moist, and I didn’t notice any gristle or fatty bits.
There’s the slightest amount of heat and spice, but I’m a big wimp when it comes to spicy food and would say the heat is barely noticeable. The cilantro flavor is subtle but still present. Overall, the chicken and sauce are both quite tasty, and the dish is well-seasoned without being overly salty.
Cost
The two-pound package contains two packs of chicken and two packs of cilantro lime sauce and costs $14.79 USD, which I think is quite expensive. I suspect part of the higher price comes from the fact that it’s marketed as a paleo-friendly meal made with higher-quality ingredients.
Convenience
I followed the package directions to heat the fully cooked chicken and used the skillet method, which only took a few minutes. I was a little concerned that the microwave method might dry out the chicken, so I opted for the stovetop instead.
The best-before date was only about two weeks from when I purchased it, so I froze half of the package to enjoy later. The cilantro lime chicken is versatile and could be used in tacos, wraps, or served on its own with a side of rice or quinoa.

A five-ounce serving contains 160 calories, eight grams of fat, 370 milligrams of sodium, three grams of carbohydrates, zero grams of fibre, one gram of sugar, and 20 grams of protein. I like that it provides a good amount of protein without being overly high in sodium. The eight grams of fat comes from the oil in the chimichurri sauce.
Ingredients
The ingredients list is short and simple, with mostly recognizable ingredients. I like that the chicken is cooked using the sous-vide process, which helps maintain moisture and tenderness. I also appreciate that the sauce contains olive oil, and that the high oleic sunflower oil used is a better option than many other seed oils. The cilantro lime chicken is gluten-free, dairy-free, and soy-free.

A healthy, high protein convenient main option from Costco. If you despise cilantro like some do you may not like this but if you like cilantro, I think you’ll enjoy it.
It’s not but it’s paleo, gluten-free and dairy-free!
