My Costco Kirkland Signature Quinoa Salad Bar

A healthy, filling way to use the Costco Kirkland Signature Quinoa Salad!

I probably buy the Costco Kirkland Signature Quinoa Salad at least three times a month. With a few extra ingredients, the Costco Kirkland Signature Quinoa Salad makes a really healthy, balanced, nutritious dinner. Did you know quinoa is actually not a grain but a seed? I didn’t know that myself until I did some research on the health benefits of quinoa. My loaded Costco Kirkland Signature Quinoa Salad recipe makes a perfect busy weeknight dinner because you can prepare all the ingredients and keep them in the fridge so if people are eating at different times, it’s all there for them already.

Ingredients

1 container of Costco Kirkland Signature Quinoa Salad

1 1/2 cup Costco Concerto tomatoes, halved

4 stalks of celery chopped

½ cup diced carrots

1 can of no salt added chickpeas drained and rinsed

2 bell peppers diced

1 avocado peeled and died

½ cucumber chopped small

1 Costco Kirkland Signature Boneless Skinless Chicken Breast cooked and chopped (optional)

Feta cheese (for sprinkling on top, optional)

Directions

1. Chop and prepare all ingredients.

2. You can choose to combine all the ingredients with the quinoa salad in your own big salad bowl or create a “Costco Quinoa Salad Bar” with all the different ingredients out for people to add as much or as little as they like to their plate.
