I couldn’t resist picking up the Kirkland Signature Toffee Shortbread Cookies from Costco on my last trip! The festive red and green sprinkles immediately caught my eye, and really, who can resist shortbread? I was especially excited to try them when I noticed they included toffee. These are located in the Costco bakery section, near the Kirkland Signature Ginger Cookies and the Kirkland Signature Fruit Cake. The item number is 1983764.
Taste
These shortbread cookies are tasty, though not the best I’ve had. They are very sweet, with the flavor leaning more toward sugary than buttery. The texture is crisp and crumbly, rather than chewy or soft.

The sugar crystals on top add a bit of extra crunch and sweetness. There are a few chunks of toffee in the cookies, but they aren’t very noticeable.
The festive sprinkles add color but not additional flavor or sweetness. I wish these were just a bit more buttery and less sweet. Kids will probably enjoy them—my daughter thought they were pretty tasty.

Cost
The container of cookies costs $9.99 Canadian and includes about 20 cookies. That seems like a pretty reasonable price for a large container of tasty cookies.
Convenience
The cookies have a best before date that’s five days from the date they were packaged. You can easily pop the whole container of cookies in the freezer to help maintain their freshness as well. These are perfect for kids to enjoy with a mug of hot chocolate after playing in the snow!

I’m working on getting the nutrition facts for the cookies, but wanted to get this review up. Based on similar cookies I’ve reviewed before, I’m guessing each one is around 160 calories, 8 grams of fat, and 13 grams of sugar.

Ingredients
I like that butter is listed as an ingredient in these cookies but they’re not all-butter shortbread. There are a lot of ingredients I don’t love seeing though and I wouldn’t use in my baking at home like palm oil, canola oil and flavor. The cookies contain wheat, milk and soy and almond and may contain other tree nuts, peanuts and sesame.

These aren’t my favorite shortbread cookies; I prefer a version that’s a bit softer and chewier. These were still enjoyable though and I didn’t dislike them!
