In the heat of summer, I’m all for light, fruity desserts like this new Kirkland Signature Strawberry Scoop Cake from Costco. It looks incredibly appealing with layers of cake and cream topped with what seems like a million strawberries. Find out whether this is a must-have summer dessert from Costco by reading the review below!

Location in Store

This is located in the refrigerated bakery section of Costco, near the Kirkland Signature Tuxedo Cake and the Kirkland Signature Tiramisu Scoop Cake. The item number is 1817145.

Taste

The Kirkland Signature Strawberry Scoop Cake is a light, simple dessert that’s very similar to a classic strawberry shortcake. It starts with a layer of soft, sweet white cake, followed by a creamy custard layer with a pudding-like consistency, strawberry jam, whipped cream, and small pieces of strawberry.

Another layer of white cake is topped with a thin layer of whipped cream and plenty of fresh strawberries. Overall, the cake isn’t overly sweet and has a mild flavor. Most of the strawberry flavor comes from the fresh strawberries on top, while the custard and whipped cream add a slightly sweet, creamy texture.

We purchased our cake the day after it was packaged, and the strawberries on top weren’t at their best, so I recommend buying it and serving it the same day it’s packaged for the freshest flavor and texture.

The cake is light and easy to eat, although it does become a bit soggy from the cream and custard. I think Costco is trying to replace their previous Kirkland Signature Strawberry Shortcake with this but I prefer the old version.

Cost

The Kirkland Signature Strawberry Scoop Cake costs $26.99 Canadian at Costco, which isn’t cheap, but it’s a large, heavy dessert that can easily serve a crowd. With the cost of groceries increasing so much over the past few years, I don’t think $26.99 is unreasonable for the size of the cake.

Convenience

The cake needs to be kept refrigerated and has a best-before date that’s about four days from when I purchased it. I wouldn’t recommend freezing it because I’m pretty sure it would turn into a soggy mess once thawed. This is the perfect dessert to serve at a summer barbecue, bring to a potluck, or even take camping if you have a way to keep it chilled.

Ingredients

The ingredients list isn’t terribly long, but it contains quite a few additives, which is disappointing. I do appreciate that real strawberries are one of the ingredients. The Strawberry Scoop Cake contains milk, egg, wheat, and soy, and may also contain peanuts, tree nuts, and sesame.

Overall

Give it a try!

While I would have liked a stronger strawberry flavor throughout, the creamy custard is nice and helps make this an enjoyable summer dessert. We shared this with my parents and they enjoyed it a lot more than my husband and I did.
